Most of the turkey frier's I have seen and tall and skinny, a short wide pot should be able to heat a bit better.

This will probably increase your boil off rate as well.

yes, yes they have $10.50/lbs for willamette.  And I hear they're back to the 19 and 20oz "pounds".
