Hey,
I've got ~2 gallons of ice beer that I want to carbonate. Priming won't do it 'cause the Windsor yeasties are not happy about being frozen & now swimming in ~10% abv. Can anyone help me carbonate & bottle this experiment. I've got the bottles & caps but not the equipment to force carbonate.

If you can't find anyone who can help you force carb, you could make a slurry of champagne yeast(lalvin EC-1118), pitch that and then bottle condition. They should tolerate up to 18% alcohol.

O' Tim, Thanks. Didn't think of using Champagne Yeast. I think I've figured a way to force carbonation. If not then will go the champagne route. Will let you know how it goes. Dennis.
